Massaged Kale and Potato Salad
Ribbing, finely slicing, and massaging kale.
Prep time: 40 minutes
Serves: 4, 1 cup servings
8 Small Yellow Potatoes, quartered (You may also sub for another kind of potato. If using russet potatoes, use 4 medium potatoes).
1 Bunch Kale
3 Tbsp. Olive Oil
½ Tbsp. lemon juice
¼ cup Mustard
2 Tbsp. freshly chopped chives (you may substitute for minced onion)
2 Cloves Garlic, minced
½ tsp. Sea Salt
¼ tsp. Black Pepper
Boil the potatoes until tender, then drain and set aside.
Rib the kale and slice into fine ribbons then place in a mixing bowl
Add in 1 Tbsp. olive oil and the lemon juice and massage for 3 minutes.
In a separate bowl, combine the remaining olive oil, mustard, garlic, and chives. Mix well, until blended and creamy looking.
Add the potatoes to the kale and mix evenly.
Pour the dressing over the kale and potato mixture. Mix until the kale and potatoes are evenly coated.
Season with salt and pepper.
