2 Ribs of Celery
2 Bell Peppers
1 Apple (preferably fuji, as it holds up fairly well)
2 Medium to Long Carrots
1 bunch Cilantro
1. Juice the lemon.
2. Finely chop each fruit and vegetable and lightly toss with lemon juice.
3. Finely chop the bunch of cilantro and sprinkle over the confetti of produce.
4. If you feel so inclined, feel free to zest the lemon over the finished product.
5. Store for up to 3-4 days in an air tight container in the fridge.
